This book deals with food in a new light and stresses the importance of personal sensitivity to food: each individual is unique, and what is good for one is not necessarily good for the other. Thus, a large number of people (15 to 20% of the population) suffer from hypersensitivity to one or more foods, which can result in signs such as fatigue, migraine, sleep disorders, depression, joint pain, which are not always thought to be related to food.
In fact, alongside classic food allergies, the manifestations of which occur shortly after ingestion of the food, there are delayed allergies which appear several hours or several days after food intake. Removing the foods responsible for these ignored allergies then gives surprising therapeutic results with the disappearance of symptoms that have sometimes existed for several years.
The author describes here the mechanism of these allergies and proposes a test of simple use which only requires the taking of the radial pulse to evaluate the sensitivity of each one in front of a food (RAFT — Radial Artery Food Test). He also presents the results of his numerous clinical observations carried out over several years, with specific examples, in particular on gluten intolerance and allergies to dairy products.
